This Garlic Parmesan Oven Roasted Zucchini Recipe is low in calories and easy to make!
You can use any dried herbs in this baked zucchini recipe, but we find that Italian seasoning works well with the parmessan cheese.
You can omit the cheese for a vegan oven baked zucchini recipe!

Ingredients
 
 

  • 4 zucchini quartered lengthwise
  • ¼ cup freshly grated Parmesan
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • teaspoon pepper
  • Olive oil spray

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a baking sheet with parchment paper and set aside.
  • In a small bowl, combine Parmesan, Italian seasoning, garlic powder, salt and pepper, and mix together.
  • Place zucchini onto prepared baking sheet. Spray with olive oil and sprinkle with Parmesan mixture.
  • Place in the oven and bake 15-20 minutes, until tender. Then broil for 2-3 minutes, or until crisp and golden brown.
  • Serve hot.
