  • 2 (8-inch) whole-wheat tortillas (or low carb tortillas)
  • Olive Oil Spray

Healthy Tortilla Bowl Meal Prep and Storage

Meal Prep– You can make these tortilla bowls ahead of time. Then add to a 1-2 gallon freezer bag and store in the fridge. If they get soft, follow the re-crisp directions.
Storage– Store in the fridge for 5 days. Will get soggy in the freezer, not recommended.
Re-Crisp – To crisp up your tortilla bowls after storage (if you need to- not required) add them to an oven at 350 degrees for 5 minutes. Then let cool on the counter. They will crisp right up.

These Low Calorie Tortilla Bowls are just 122 calories and can be made even lower calorie with low carb tortillas!
I wanted to use the most common tortillas for the nutrition, this way your starting point is higher.
Special Tip: I've included some yummy salads to add to the bowls just incase you're looking.

Equipment

  • 2 oven safe bowls

Ingredients
 
 

  • 2 (8-inch) whole-wheat tortillas (or low carb tortillas)
  • Olive Oil Spray

Instructions
 

  • Preheat the oven to 375 degrees.
  • Place the tortillas in two oven-safe bowls.
  • Spray the tops of the tortillas with olive oil spray.
  • Bake for 10-20 minutes until browned and crispy.
  • Remove from the oven and place upside down on a cooling rack until ready to use.
  • Special Tip: If you don't have oven safe bowls you can use two 9×9 casserole dishes. Just ball up some foil in the corners of the baking dish to give it a round shape.
