Meal Prep: You can meal prep this healthy recipe easily. Simply assemble, wrap in parchment paper and add to a plastic bag or container.
Storage: Will hold for 2 days in the fridge (may get soggy, so 1 day is ideal), does not do well in the freezer.

These Low Calorie Grilled Cheese Sandwich are just 238 calories thanks to my Low Calorie Bread Recipe!
I like to use sharp cheddar, it has more flavor and therefore you don't need as much to get the cheesy flavor you want in a healthy grilled cheese. And 2 slices of the cheese is 1/4 cup, just in case you want to use shredded cheese instead of sliced.
Special Tip: If you want to get store-bought bread, it will change the calories a bit. You can also get Dave's Killer Bread Thin-Sliced bread as it has the same calorie count as the homemade recipe I supply below.

Equipment

  • Skillet (use a grated pan if you want grill marks)

Ingredients
 
 

Optional Add-Ins:

  • Sliced tomato
  • Cooked and shredded chicken
  • Sliced Avocado
  • Pickled jalapeños
  • Hot sauce
  • Cooked and crumbled bacon or turkey bacon
  • Dijon mustard
  • Deli turkey or ham

Instructions
 

  • Heat a pan over medium heat.
  • Spray the pan with olive oil, and add one slice of bread to the hot pan.
  • Add the cheese, and any additional ingredients to the bread in the pan, and top with the remaining slice of bread.
  • Cover and cook for 3-5 minutes, until the bottom bread slice is toasted and the cheese has started to melt.
  • Flip the sandwich and cook uncovered for an additional 3-5 minutes until both slices of bread are toasted and the cheese is melted.
  • Move to a cutting board and slice in half, serve hot.
