  • 2 slices mozzarella
  • 4 large basil leaves or 8 small
  • Olive Oil Spray
  • 1 garlic clove optional

Meal Prep: You can meal prep this healthy recipe easily. Simply assemble, wrap in parchment paper and add to a plastic bag or container.
Storage: Will hold for 2 days in the fridge (may get soggy, so 1 day is ideal), does not do well in the freezer.

These caprese panini sandwiches are just 360 calories and so easy to make.
I boosted the flavor with the help of garlic, you'll want a whole, peeled clove of garlic to rub over the grilled bread. This adds just a little flavor without overwhelming the vegetarian sandwich.
Special Tip: You can add as much basil as you like, so if you love basil, really pack it in there. It's a natural pain reliever!

  • Panini Maker OR a Grated pan and a second pan that will fit inside the grated pan (for squishing)

  • Preheat a grated pan or panini maker over medium heat.
  • While it preheats, assemble the paninis- Place the bread on a cutting board and alternate tomatoes and mozzarella topping one slice of bread from end to end with tomato and mozzarella.
  • Top with basil leaves and the second slice of bread.
  • Spray the grated pan or panini maker with olive oil and add the sandwich.
  • Grated Pan Method- If using a grated pan, add another pan to the top of the sandwich (with the bottom of the pan- the part that usually touches the stove top) to squish it down.
    Panini Maker Method- If using a panini maker, simply close over the sandwich.
  • Grill for 5 minutes, and flip. Cook for an additional 3-5 minutes until the bread is golden brown, and the cheese melted.
  • Move to a cutting board, and rub the garlic clove over the grilled sides of the bread.
  • Cut in half, and serve.
