Ingredients You’ll Need
- 2 cups shredded chicken
- 6 ounces Neufchatel cheese
- ½ cup crumbled blue cheese
- ⅔ cup 0% Greek yogurt
- ½ cup hot sauce (ideally Frank’s Red Hot Sauce)
- ¼ cup shredded cheddar cheese
- Ranch Seasoning (see recipe card below)

Healthy Buffalo Chicken Dip Meal Prep and Storage
Meal Prep: You can meal prep 2 ways. You can cook the healthy recipe completely then store for later, or assemble and bake later.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Low Calorie Buffalo Chicken Dip
Ingredients
Ranch Seasoning:
- 1 clove of garlic minced
- 3 tablespoons minced chives
- 2 tablespoons parsley
- ½ teaspoon dill
- 1 tablespoon white vinegar
- ¼ teaspoon salt
- ¼ teaspoon pepper
Ingredients to to Make Healthy Buffalo Chicken Dip:
- 2 cups chicken cooked and shredded
- 6 ounces Neufchatel cheese softened
- ½ cup crumbled bleu cheese
- ⅔ cup 0% Greek yogurt
- ½ cup hot sauce ideally Frank’s Red Hot Sauce
- Ranch Seasoning above
- ¼ cup shredded cheddar cheese
Instructions
Slow Cooker Directions:
- Combine the seasoning ingredients to a small bowl, mix well.
- Add the Chicken, Greek Yogurt, Neufchatel cheese, blue cheese, yogurt, hot sauce and ranch seasoning to the slow cooker.
- Mix well, and cover.
- Cook the recipe for Buffalo chicken dip crockpot for 1 to 2 hours on High heat, or 3 to 4 hours on Low heat.
- Mix together the ingredients again, then top with cheese. Cover and cook for 5 minutes longer until the cheeses melted.
- Serve hot with crunchy veggie sticks, or chips.
Instant Pot Directions:
- Combine the seasoning ingredients to a small bowl, mix well and set aside.
- Add chicken breasts to an instant pot, add hot sauce and water, do not stir ingredients.
- Cover and seal your instant pot, and cook on high pressure for 10 minutes.
- Do a quick release, and remove the chicken to a plate to cool slightly.
- Shredded the chicken with two forks, and return to pot.
- Add the Greek yogurt, blue cheese, and ranch seasoning to the Buffalo chicken dip instant pot.
- Mix well, top with cheddar cheese, and set your instant pot to sauté.
- Sauté for 5 to 10 minutes, until your buffalo dip is thick, and bubbling.
- Serve hot with crunchy veggie sticks, or chips.
Oven Directions:
- Preheat the oven to 350 degrees.
- Combine the seasoning ingredients to a small bowl, mix well.
- Add the Chicken, Greek Yogurt, Neufchatel cheese, blue cheese, yogurt, hot sauce and ranch seasoning to a 9×9 casserole dish.
- Mix well, top with cheddar cheese, and bake for 20 minutes, until hot and bubbling.
- Serve hot with crunchy veggie sticks, or chips.
