  • 2 tablespoons 0% Greek Yogurt
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 large hard boiled egg
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon everything bagel seasoning (optional)

Meal Prep: These recipes are a little difficult to “meal prep”. You can make the boiled eggs ahead of time and cool. The rest needs to be done fresh, but don’t worry it’s quick.

  • Toast the bread to your desired doneness.
  • Meanwhile, add the avocado, greek yogurt, salt and pepper to a medium bowl and mash together.
  • When the toast is done, smear 1/2 of the mashed avocado on each slice.
  • Use a microplane grater (with a safety glove) to shred the 1/2 the egg over each of the toasts.
  • Top with red pepper flakes and everything bagel seasoning and serve.
