Healthy Grated Egg Avocado Toast Meal Prep and Storage
Meal Prep: These recipes are a little difficult to “meal prep”. You can make the boiled eggs ahead of time and cool. The rest needs to be done fresh, but don’t worry it’s quick.
Storage: If you have leftovers (again meal prep is not ideal with this recipe) you can store it in a meal prep container and store in the fridge for 4 days.

Low Calorie Grated Egg Avocado Toast
Ingredients
- 2 slices of bread (see low calorie options here)
- ½ avocado
- 2 tablespoons 0% Greek Yogurt
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 large hard boiled egg
- ½ teaspoon red pepper flakes optional
- 1 teaspoon everything bagel seasoning optional
Instructions
- Toast the bread to your desired doneness.
- Meanwhile, add the avocado, greek yogurt, salt and pepper to a medium bowl and mash together.
- When the toast is done, smear 1/2 of the mashed avocado on each slice.
- Use a microplane grater (with a safety glove) to shred the 1/2 the egg over each of the toasts.
- Top with red pepper flakes and everything bagel seasoning and serve.
