Ingredients in Low Calorie Frittatas

I like use spinach, tomatoes, and feta in this recipe. But you can swap out the spinach for your favorite greens (kale is great in this) and the tomato for bell pepper or even squash. And you can use cheddar or pepper jack in place of the feta.

I like to use a combination of whole eggs and egg whites, so if tossing out egg yolks bums you out (it does with me) you can get a little carton of egg whites and a small carton of eggs to make this low calorie frittata.

You’ll need an oven safe skillet or cast iron skillet to make this recipe. But if you don’t have one, you can easily cook the vegetables on the stovetop, then transfer everything to a 9×9 casserole dish or a large pie pan (to get the correct shape).
