Ingredients in Low Calorie Frittatas

I like use spinach, tomatoes, and feta in this recipe. But you can swap out the spinach for your favorite greens (kale is great in this) and the tomato for bell pepper or even squash. And you can use cheddar or pepper jack in place of the feta.

I like to use a combination of whole eggs and egg whites, so if tossing out egg yolks bums you out (it does with me) you can get a little carton of egg whites and a small carton of eggs to make this low calorie frittata.

How to Make Low Calorie Frittatas

You’ll need an oven safe skillet or cast iron skillet to make this recipe. But if you don’t have one, you can easily cook the vegetables on the stovetop, then transfer everything to a 9Γ—9 casserole dish or a large pie pan (to get the correct shape).

How to Make Low Calorie Frittatas:

  1. Preheat the oven to 400 degrees.
  2. Heat an oven safe pan or cast iron skillet over medium-high heat and spray with olive oil.
  3. Add the red onion and cook for 5 minutes until softened.
  4. Add in the tomato and spinach and cook until the spinach is wilted and the liquid from the spinach and tomatoes has evaporated. About 5 minutes.Β 
  5. Move the vegetables to a bowl to cool, and wipe the pan clean with a paper towel.
  6. Spray the pan again with olive oil.
  7. In a large bowl combine the eggs and egg whites whisk well.
  8. Add the vegetables and cheese to the egg mixture, along with salt and pepper, and stir until combined.
  9. Pour the egg mixture into the pan.
  10. Bake for 15 minutes or until the center is set.
  11. Remove from the oven and let rest for 5 minutes before cutting into 8 slices and serving.
