  • Olive oil spray
  • 6 eggs
  • ½ cup unsweetened almond milk
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ¼ cup Sun Dried Tomatoes chopped
  • 1 9-inch pie crust
  • ⅓ cup feta cheese

Healthy Breakfast Quiche Meal Prep and Storage

Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

This easy breakfast quiche recipe is just 157 calories, and is so easy and packed full of flavor… you'll love it!
To make this healthy breakfast quiche extra easy, we used store-bought pie crust (and it's still super low in calories!) But you can use your favorite pie crust recipe if you prefer.
Special Tip: You can turn this vegetarian breakfast quiche into a meaty one… Add 1/2 cup cooked breakfast sausage or ham in step #4.

  • Preheat oven to 400 degrees. (If the pie crust needs to be pre-baked, complete as well)
  • Heat a large skillet over medium high heat. Spray with olive oil and add the spinach. Cook until wilted (about 3 minutes).
  • Meanwhile, to a large bowl add eggs, almond milk, salt and pepper. Whisk well.
  • Add the wilted spinach, sun dried tomatoes, and 1/2 of the cheese to the pie crust.
  • Pour over the egg mixture, and sprinkle the top with the remaining cheese.
  • Add to the hot oven and bake for 20-25 minutes until crust is golden brown and the eggs are set.
  • Remove from the oven and let sit for 10 minutes before slicing.
