Healthy Cloud Bread Meal Prep and Storage

Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat (or if stored unbaked follow directions below to bake) in an oven at 200-250 degrees until warmed through.

You only need 3 ingredients to make healthy cloud bread, and it's low carb, low sugar and protein packed.
Special Tip: It is very important that you allow these cloud breads to cool completely after removing them from the oven. I like to let the cool for 2 hours on the cooling rack before serving.

Ingredients
 
 

  • 3 large eggs whites and yolks separated
  • teaspoon cream of tartar
  • cup 0% Greek yogurt

Instructions
 

  • Preheat oven to 300° degrees and line a baking sheet with parchment paper.
  • With a countertop mixer or handheld mixer whip the egg whites & cream of tartar on high speed until stiff peaks form.
  • In a separate large bowl mix egg yolks and greek yogurt until smooth.
  • To the egg yolks gently fold in 1 cup of the egg white mixture until well combined. Then add the remaining egg whites and fold in until just until combined.
  • Divide the batter into 6 equal portions on the prepared baking sheet. Then spread out until about 1/2 inch thick.
  • Bake for 30 minutes or until lightly browned.
  • Remove from the oven and immediately move to a wire rack and cool completely for at least 60 minutes.
