- 1 chicken breast
- 1 teaspoon olive oil
- 1 teaspoon Italian Seasoning
- Salt and Pepper
- 12 ounces Fettuccine pasta
- ¼ cup Parmesan cheese
- 2 tablespoons fresh parsley
- 1 tablespoon butter (or coconut oil)
- 2 cloves garlic
- 1 tablespoon flour (all-purpose or Gluten-free)
- 2 cups Unsweetened almond milk (or your desired milk)

Meal Prep: I love to meal prep this low calorie creamy pasta recipe! I make it ahead of time (often for dinner- then store the leftovers as meal prep dinners) and move to either individual meal prep containers, or family sized containers.
Storage: Will hold for 5 days in the fridge or 1 month in the freezer.
Reheating: Reheat in the microwave for 1-2 minutes.

Low Calorie Fettuccine Chicken Alfredo
Ingredients
- 1 chicken breast
- 1 teaspoon olive oil
- 1 teaspoon Italian Seasoning
- Salt and Pepper
- 12 ounces Fettuccine pasta cooked according to package
- ¼ cup Parmesan cheese
- 2 tablespoons fresh parsley chopped
- 1 tablespoon butter or coconut oil
- 2 cloves garlic
- 1 tablespoon flour all-purpose or Gluten-free
- 2 cups Unsweetened almond milk or your desired milk
Instructions
- In a large pan, add the chicken, salt, pepper, olive oil and Italian seasoning. Toss together.
- Heat over medium-high heat, cooking 8-10 minutes or until chicken is fully cooked. Move the chicken to a plate.
- In the same pan over medium heat, melt the butter. Add the garlic and cook for 2 minutes, then add in the flour. Mix together until you have a thick paste.
- Pour in 1/2 the milk, whisk to remove any lumps, then add in the remaining milk.
- Cook until the sauce begins to thicken. About 10 minutes.
- Add in the salt, pepper, Italian seasoning, cooked chicken and cooked pasta. Mix together so all the pasta and chicken is covered in Alfredo sauce.
- Top with parmesan cheese and chopped parsley, and serve.
Notes
Optional Veggie Add-Ins:
- 2 cups broccoli florets
- 2 cups Brussels sprouts (cut in half)
- 1 cup frozen peas and carrots
- 5 cups baby spinach (cook down to wilt in a separate pan before adding to Alfredo)
- 2 cups cauliflower

Really loved this recipe! So did my hubby. I added double the garlic and spinach and broccoli so we could have bigger portions and it was awesome. One thing I did was to cook the chicken breast in the air.fryer which allowed less oil and tool less time overall (6bmin per side at 370 degrees). This dish will definitely be a staple in our house.
