This Low Calorie Toasted Coconut Granola is vegan, gluten-free, and healthy! This is the best granola recipe for topping yogurt with, or eating as a cereal with milk. It’s especially amazing with cashew milk, because it’s a cashew granola recipe!
Ingredients You’ll Need:
- 2 ½ cups old-fashioned rolled oats
- 2 tablespoons coconut oil
- 2 tablespoons zero calorie all natural brown sugar (see recipe card)
- 2 tablespoons cashews
- 2 tablespoons flax seeds
- ¼ cup flaked coconut
- ½ cup unsweetened apple sauce
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt

Healthy Toasted Coconut Granola Meal Prep and Storage
Meal Prep: This recipe is idea for meal prep. The longer it cools and sits out, the crunchier it will get. You can make up to a week ahead of time.
Storage: Store in an airtight container in the fridge for up to a week. Not ideal for freezer storage.

Low Calorie Toasted Coconut Granola
Ingredients
- 2 ½ cups old-fashioned rolled oats
- 2 tablespoons coconut oil
- 2 tablespoons zero calorie all natural brown sugar
- 2 tablespoons cashews
- 2 tablespoons flax seeds
- ¼ cup flaked coconut
- ½ cup unsweetened apple sauce
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
Instructions
- Preheat the oven to 350°.
- In a 9 x 9 casserole dish, combine all the coconut granola ingredients, and mix well.
- Bake for 15 to 18 minutes, stirring twice, until golden brown.
- Remove from the oven and leave uncovered on the countertop overnight to crisp up. Then store in a cool dry place for up to a week.
