Easy Toasted Coconut Granola Recipe

Ingredients You’ll Need:

  • 2 ½ cups old-fashioned rolled oats
  • 2 tablespoons coconut oil
  • 2 tablespoons zero calorie all natural brown sugar (see recipe card)
  • 2 tablespoons cashews
  • 2 tablespoons flax seeds
  • ¼ cup flaked coconut
  • ½ cup unsweetened apple sauce
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt

Meal Prep: This recipe is idea for meal prep. The longer it cools and sits out, the crunchier it will get. You can make up to a week ahead of time.
Storage: Store in an airtight container in the fridge for up to a week. Not ideal for freezer storage.

This easy toasted coconut granola recipe is vegan and gluten-free, and can be made in just one pan!

  • Preheat the oven to 350°.
  • In a 9 x 9 casserole dish, combine all the coconut granola ingredients, and mix well.
  • Bake for 15 to 18 minutes, stirring twice, until golden brown.
  • Remove from the oven and leave uncovered on the countertop overnight to crisp up. Then store in a cool dry place for up to a week.
