How to Make Low Calorie Chicken and Dumplings

Making chicken and dumplings crockpot recipes are extremely easy. I was able to make this recipe even easier, by cutting out many of the beginning steps. By just adding everything to the crockpot, you’re able to save 30 minutes of stove top cook time.

The crockpot recipe can be made on high, or low settings. If you want to get it started in the morning, and come home to a delicious dinner, I recommend using the low setting.

How to Make Slow Cooker Chicken and Dumplings:

  1. To a slow cooker, combine the chicken, onion, celery, salt, pepper, shredded carrots, and garlic cloves.
  2. Add in the chicken broth and mix together, then cook on high for 3 hours or on low for 6 hours.
  3. Remove the chicken from the slow cooker and shred with two forks, or chop the chicken into small bite-size pieces.
  4. Remove half a cup of the liquid to a bowl or glass measuring cup. Mix in the cornstarch, and whisk until there are no lumps. Add the cornstarch liquid, almond milk, and shredded chicken to the pot. Mix well.
  5. Combine the dumpling ingredients in a medium bowl, and mix with a wooden spoon until just combined.
  6. Use a spoon, to gather a ping pong ball size dollops of dumplings. Drop each individually into the slow cooker. Cook on high for 30 minutes, or until the dumplings float to the top.
  7. Serve hot, makes 4 servings.

How to Make Stovetop Chicken and Dumplings:

  1. To a large saucepan, combine the chicken, onion, celery, salt, pepper, shredded carrots, and garlic cloves.
  2. Cook for 10 minutes on medium heat until the vegetables start to soften and the chicken browns a bit (it won’t be cooked though yet).
  3. Add in the chicken broth and mix together, bring to a simmer and cook for 35 minutes sitting often.
  4. Remove the chicken from the pan and shred with two forks, or chop the chicken into small bite-size pieces.
  5. Remove half a cup of the liquid to a bowl or glass measuring cup. Mix to that liquid add in the cornstarch, and whisk until there are no lumps. Add the cornstarch liquid, almond milk, and shredded chicken to the pan. Mix well.
  6. Combine the dumpling ingredients in a medium bowl, and mix with a wooden spoon until just combined.
  7. Use a spoon to gather a ping pong ball size dollops of dumplings. Drop each individually into the pan. Cook for an additional for 30 minutes, or until the dumplings float to the top.
  8. Serve hot, makes 4 servings.

Leftover Storage Tips: You can store leftovers of this crockpot chicken and dumplings recipe in the freezer, for up to two months. Or in the fridge, for 2 to 3 days. It’s best reheated on the stove top, or in the microwave.
