Meal Prep: You can meal prep 2 ways. You can cook the healthy recipe completely then store for later, or assemble and then cover and place in the fridge to bake later.
Storage: Will hold in the fridge for 5 days.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes).

Low Calorie High Protein Stuffed Tomatoes
Ingredients
- 2 tomatoes
- 1 teaspoon salt
- ½ cup cooked, shredded chicken
- 2 teaspoons parmesan cheese
- ½ cup Homemade Marinara Sauce (or store bought)
- ¼ cup mozzarella cheese
Instructions
- Preheat oven to 400° and line a casserole dish with 2 layers of paper towels.
- Slice the tops of the tomatoes off, and scoop out (and discard) the pulp and seeds.
- Salt insides and rest upside down over the paper towel lined casserole dish extract juices, about 15 minutes.
- Meanwhile, in a medium bowl, mix together the chicken, Parmesan cheese, and 1/4 cup marinara sauce.
- Flip the tomatoes cut side up, and discard the paper towels.
- Stuff the tomatoes with the filling. Spoon over the remaining marinara sauce, and then top with the mozzarella cheese.
- Bake for 30 minutes, until tomatoes are cooked through and tops are golden brown.
