Healthy Breakfast Burrito Meal Prep and Storage
Meal Prep: You can easily meal prep these! Simply wrap individual burritos in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes.

Low Calorie Breakfast Burritos
Ingredients
- Olive oil spray
- 1 onion chopped
- 1 red bell pepper chopped
- 1 jalapeno chopped (optional)
- 1 garlic clove minced
- 2 tablespoons fresh cilantro minced
- 4 eggs
- 4 large tortillas
- ½ cup sharp cheddar cheese shredded
Optional Meat (choose 1):
- 4 turkey breakfast sausage links cooked and sliced
- 2 sliced of bacon cooked and crumbled
- ¼ cup diced cooked ham
Instructions
- Heat a skillet over medium heat, spray with olive oil and add in onion and bell pepper. Cook for 5 minutes, until the veggies start to soften.
- Add in the garlic and cook for 1 minute, then move the vegetables to a bowl and return the pan to the heat.
- Whisk the 4 eggs in a medium bowl, spray the pan with olive oil, and add the eggs to the pan.
- Scramble the eggs until just set, then remove from the heat.
- To each tortilla add eggs, 1/8 cup of cheese, veggies (and optional meat) and cilantro.
- Roll up the breakfast burritos, and serve hot.

Great question! Kale will work, so will some cubed and cooked potatoes or sweet potatoes.
I can’t eat that many peppers in one meal. Most of your meals include peppers. Is there a substitute? Peppers give me indigestion.
