3 Ways You Can Make Thai Mango Sticky Rice:
- Rice Cooker Sticky Rice: all you need is a Rice Cooker
- Stovetop Sticky Rice: You’ll need a Large Lidded Pot and a Metal Colander
- Instant Pot Sticky Rice: You’ll need an Instant Pot and a Instant Pot Colander Insert
How to Make Mango Sticky Rice:
How to Make Sticky Rice in a Rice Cooker:
- Soak rice in water for 4 to 10 hours.
- Drain the rice and place in a rice cooker, along with 2 1/2 cups water. Set to cook.
- Once done, allow to sit for about 20 minutes.
How to Make Rice Sticky on the Stove Top:
- Soak rice in water for 4 to 10 hours.
- Place a metal colander inside a large pot with a lid.
- Add water so that it reaches to just below the bottom of the colander.
- Drain the soaked rice and put it inside the colander in the large pot.
- Bring water to a simmer and cover with a lid.
- Steam rice, covered, for 10 minutes.
- Using a large spatula, flip the entire portion of rice.
- Put the lid back on and continue steaming the rice for another 20 minutes.
How to Cook Sticky Rice in an Instant Pot:
- Soak rice in water for 4 to 10 hours.
- Drain the soaked rice.
- Add 1 cup water to the bowl of the Instant Pot then add an Instant Pot colander insert.
- Add the rice to the Instant Pot colander insert.
- Close and lock the lid. Set the cook on high pressure (manual setting) for 12 minutes.
- Allow the pressure to release naturally for 12 minutes, then manually release the remaining pressure.
How to Make Mango Sticky Rice:
- While rice is cooking, in a small saucepan bring the light coconut milk to a boil with the zero calorie sweetener, and salt, stirring until sweetener is dissolved.
- Transfer cooked sticky rice to a bowl and stir in 2/3 of the coconut milk mixture. Place the remaining coconut milk in the fridge to cool.
- Cover the sticky rice and let stand for 30 minutes, until the coconut milk is absorbed.
- To serve, scoop 1/4 cup servings of sweet sticky rice into bowls.
- Drizzle with chilled sauce and sprinkle with coconut flakes.
- Top with mango chunks and serve.
