Spicy Avocado and Egg Toast- 210 calories

Mummmm, the perfect hangover food, full of good fats and spicy sauce to burn off the alcohol. Avocados are in season and on sale, so watch out people there will be a lot of recipes w/ avocados coming your way. This is quick and easy and full of protein and calcium and keeps me full until lunch. I love spicy food, adding spice to a meal will add a ton of flavor without a ton of calories. If you are really brave, or really hung over, top with some jalapeno slices they will burn off any ill feelings right away!

Serves 2-

2 slices Wheat Bread toasted
½ Avocado sliced
2 Large Eggs
¼ cup Greek Yogurt
Salsa or Hot Sauce, as much as you like. I like Pepper Plant hot sauce.

I like my eggs almost over hard, I wish I was into runny eggs but I’m not. Make each egg to your liking while you toast the bread. Top the bread with the avocado slices, then the egg. In a small bowl add some salsa to the Greek yogurt and mix well, top the egg with the mixture add more salsa and jalapeno if you like. Cut in half and serve.

More interested in a sandwich? Go ahead and top off with another slice of toast for only about 65 calories. A word on bread, the bread isle is full of preservative and chemical infused food, I go to the bakery in the grocery store or to a local bakery (if I have time) and buy fresh bread. It does not last as long because of the lack of chemicals so take ½ of the loaf and put it in the freezer. It is about the same cost, maybe about a dollar more… you are worth a dollar my dear put down the chemicals and go natural.
