Meal Prep: You can make these ahead of time and add to meal prep containers for the week.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Equipment
- slow cooker
Ingredients
- 2 cups baby spinach
- 4 boneless skinless chicken breasts
- ¼ teaspoon garlic salt
- ¼ teaspoon pepper
- 1 tomato cut into rings
- ½ cup shredded cheddar cheese
Instructions
- Add the chicken and spinach to the slow cooker.
- Cook on LOW for 5 hours or on HIGH for 2 hours and 30 minutes.
- Uncover the slow cooker, but leave it on. Add the tomato slices to the tops of the chicken, and spoon the wilted spinach over the tomatoes.
- Top with cheese and cook for an additional 30 minutes on HIGH uncovered.
- Use a spatula to gently move the crockpot chicken breasts to plates and serve hot.
