Healthy Baked Sweet Potato Meal Prep and Storage

Meal Prep– These make great meal prep sides!! Make as many as you like and cool completely. Then add to a freezer bag or storage container for later.
Storage– Store in the fridge for 5 days or the freezer for 1 month. 
Reheat – Microwave for 1 minute, or add to an oven at 350 degrees for 10 minutes until hot.

This easy recipe for baked sweet potato in oven makes the fluffiest, most delicious, absolutely perfect baked sweet potatoes!
Use these oven sweet potatoes for weekly meal prep, or as a delicious side dish. And see below for more recipes to make with these roasted sweet potatoes. I kept the recipe simple, this is a "per potato" recipe. But you can use the buttons to double or triple to make more servings.

Ingredients
 
 

  • 1 medium sweet potato
  • Salt
  • Pepper

Optional Toppings:

  • Butter
  • Coconut Oil
  • Seasoning salt

Instructions
 

  • Preheat oven to 425 degrees.
  • Line a rimmed baking baking sheet with foil.
  • Scrub the sweet potato clean, then use a fork to puncture the sweet potatoes on all sides.
  • Bake until fork tender, about 50 minutes.
  • Leave on the baking sheet to cool, then slice down the middle and sprinkle with salt and pepper.

Notes

Try adding the following items to your roasted sweet potato recipes:

  1. Pumpkin Pie Spice and Coconut Oil – Baked sweet potatoes are sweet enough. Try adding in some Pumpkin Pie Spice and a teaspoon of coconut for a sweet vegan dish.
  2. Leftover Chicken and Salsa – Just add in come shredded or cubed cooked chicken and a spoonful of your favorite salsa for a delicious oven baked sweet potato recipe.
  3. Avocado, Cilantro and Hot Sauce – This is my favorite way to enjoy oven sweet potatoes!
  4. Top with Chili – My healthy chili recipe can be made vegan, or can be made with lots of protein rich meat. Plus it goes great served over baked sweet potatoes in oven.
  5. Scoop out and Smash – I love smashed sweet potato with a nice steak! Smash with the back of your fork, then add to a plate and top with a steak and a little pan drippings for a divine dinner!
