Healthy Baked Sweet Potato Meal Prep and Storage
Meal Prep– These make great meal prep sides!! Make as many as you like and cool completely. Then add to a freezer bag or storage container for later.
Storage– Store in the fridge for 5 days or the freezer for 1 month.
Reheat – Microwave for 1 minute, or add to an oven at 350 degrees for 10 minutes until hot.

Low Calorie Baked Sweet Potatoes
Ingredients
- 1 medium sweet potato
- Salt
- Pepper
Optional Toppings:
- Butter
- Coconut Oil
- Seasoning salt
Instructions
- Preheat oven to 425 degrees.
- Line a rimmed baking baking sheet with foil.
- Scrub the sweet potato clean, then use a fork to puncture the sweet potatoes on all sides.
- Bake until fork tender, about 50 minutes.
- Leave on the baking sheet to cool, then slice down the middle and sprinkle with salt and pepper.

- Pumpkin Pie Spice and Coconut Oil – Baked sweet potatoes are sweet enough. Try adding in some Pumpkin Pie Spice and a teaspoon of coconut for a sweet vegan dish.
