These Low Calorie Sweet Potato Casserole Bites are just 12 calories each, so you can have 16 of them for less than 200 calories! I like to make these for holiday appetizers, but I often make them for side dishes too!
Ingredients You’ll Need:
- 2 sweet potatoes
- Olive Oil Spray
- 1 teaspoon cinnamon
- 6 Low Calorie Marshmallows
- 24 pecan halves

Healthy Sweet Potato Appetizer Meal Prep and Storage
Meal Prep – Bake the sweet potatoes as directed, and at this point you can chill them. You can also top them with marshmallows and pecans too (and if you do it when they are still warm, they will stick better). Then just broil before serving.
Leftover Freezer Storage – Add leftovers to an airtight container.
Leftover Refrigerator Storage – Will hold for 5 days in the fridge.
Reheat – Place individual pieces to a baking sheet and bake at 250 degrees until hot.

Low Calorie Sweet Potato Casserole Bites
Equipment
- 1-2 Baking Sheet
- 1-2 Parchment paper
Ingredients
- 2 sweet potatoes
- Olive Oil Spray
- 1 teaspoon cinnamon
- 6 Low Calorie Marshmallows or store-bought large marshmallows
- 24 pecan halves
Instructions
- Preheat the oven to 400 degrees and line 1-2 baking sheets with parchment paper.
- Peel and slice the sweet potatoes into 1/2 inch rounds. Slice the marshmallows into 4 rounds.
- Add the sweet potato rounds to the baking sheet in an even layer, spray with olive oil and then sprinkle with cinnamon.
- Bake for 20 minutes, remove from the oven, top each with a marshmallow slice, and then a pecan.
- Broil for 1-2 minutes until the marshmallows are caramelized.
- Serve hot as appetizers, or as a side dishes.
