This Low Calorie Horchata is just 47 calories and it has just 0.1g of sugar!. Thanks to some low calorie swaps, I was able to cut 100’s of calories and lost of sugar, without sacrificing flavor.

Ingredients You’ll Need:

  • 1 cup white rice uncooked
  • 4 cups water
  • 2 cinnamon sticks
  • ¼ teaspoon ground cinnamon
  • 1 cup unsweetened vanilla almond milk
  • ⅓ cup Keto Maple Syrup or pure maple syrup
  • 1 teaspoon vanilla extract

Healthy Horchata Meal Prep and Storage

Meal Prep: You can meal prep (or make party pitchers) by making the drink and skipping the ice. Then cover (jars are great for this) and store for later.
Storage: Will hold for 2 days in the fridge, or add to the freezer for a month.
Serving: Pour over ice and enjoy.

Lose Weight By Eating
This Low Calorie Horchata is just 47 calories per 1/2 cup. Served over ice this is a large serving, so be sure to use a tall glass to serve.
I cut down the calories and sugar by using Keto Maple Syrup, but you could swap out out for pure maple sirup if you prefer.
Special Tip: The key to making a great healthy horchata is the straining. So be sure to use cheesecloth to get all the chunks of rice out before serving.

  • 1 cup white rice uncooked
  • 4 cups water
  • 2 cinnamon sticks
  • ¼ teaspoon ground cinnamon
  • 1 cup unsweetened vanilla almond milk
  • cup Keto Maple Syrup or pure maple syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • Add the uncooked rice to a find meat strainer and rinse well with cold water.
  • In a large glass messaging cup or glass bowl combine the rinsed rice, 4 cups of water, and cinnamon sticks.
  • Cover and place in the fridge to soak overnight (12 hours).
  • Remove and discard the cinnamon sticks, and add the rice and water to a blender along with the ground cinnamon.
  • Blend well, then strain the horchata 2 times through a fine mesh strainer, and once through a cheesecloth lined strainer.
  • Add the horchata, almond milk, syrup and vanilla extract to a pitcher and mix well.
  • Taste and add more syrup as needed to sweeten.
  • Serve over ice.
