Ingredients in Healthy Blueberry Protein Balls
I like to use unsalted cashews in this recipe, but almonds can be use in their place as well. Peanuts will also work, but then you won’t get the “blueberry muffin” flavor. Though they will still be yummy.
And you can use your favorite vanilla protein powder, see the recipe card below for my favorite plant based protein powder.

How to Make Healthy Blueberry Protein Balls
These healthy blueberry muffin energy bites will hold for a week in the fridge, or in the freezer for up to a month.
I like to keep them in the fridge for extra easy snacking, though freezing them can help you stop at just one or two.

How to Make Low Calorie Blueberry Energy Bites
- Add the blueberries, dates, and cashews to a food processor.
- Blend until the ingredients are mostly pureed.
- Add the oats and the protein powder to the food processor and pulse until the mixture has the consistency of cookie dough.
- Your dough should be similar to cookie dough consistency. If too dry, add 1 teaspoon of water at a time pulsing in-between each until it comes together.
- Scoop out dough using a tablespoon, and roll together with your hands (if it sticks, get your hands wet).
- Place in the fridge to chill and serve cold or room temperature. Will hold for 1 week in the fridge.
