Ingredients You’ll Need:
- ½ cup strong brewed coffee (or 2 shots espresso)
- 2 teaspoons zero calorie all-natural sweetener (see link in recipe card, or choose your favorite sugar or sweetener)
- ½ teaspoon vanilla extract
- ¾ cup Unsweetened Vanilla Almond Milk
- 1 ½ cups ice

Healthy Iced Vanilla Coffee Meal Prep and Storage
Meal Prep
- Individual Servings – Brew the coffee and make the lattes as directed below in a jar with a lid- do not add ice. Place in the fridge for the next day. Then pour over ice, or add ice to the jar to serve.
- Large Servings – Brew the coffee and mix together with sugar and vanilla extract. Add to a pitcher, and chill in the fridge. Pour into glasses filled with ice, top with almond milk and serve.
Storage
- Fridge Storage – Cover and store in the fridge for 2-3 days.
- Freezer Storage – Pour any leftover latte into ice cube molds, and freeze solid (about 4 hours). Then pop out of the mold and move to a freezer bag to avoid freezer burn. Will hold for 1 month in the freezer and is great in lattes and smoothies.

Ingredients

Instructions
- Brew coffee or espresso, add all natural zero calorie sweetener and vanilla extract to the coffee when it's still hot. Mix well to dissolve.
- Fill a tall glass with ice.
- Add the brewed coffee to the glass of ice, top with almond milk and serve.

Love this! I added a little Skinny Girl salted caramel syrup and this will become a regular thing for me! I’m lactose intolerant and lactose free milk isn’t cheap. I’ll buy 1/2 gallon and usually end up dumping some because it goes bad so fast. Not anymore!
Love this. First, I don’t really like coffee, but sometimes you just need the boost. Also, I don’t frequent Starbucks, so I can’t attest to whether this is a copycat or not. What I can tell you is that it is GOOD! Audrey’s recipes never disappoint, and neither does this one. I ordered the zero calorie sweetener used in this recipe and made the coffee the night before, added the sweetener and vanilla, then put it in the fridge in a jar. Poured over ice and added the almond milk this morning. Delicious.
