  • ¼ bell pepper sliced

  • ¼ cup frozen peas carrots and corn mixture defrosted

Ingredients
 
 

  • 1 10 inch whole wheat tortilla
  • ¼ cup Homemade Hummus (or store-bought)
  • ½ cup mixed greens
  • ¼ bell pepper sliced
  • ¼ cucumber chopped
  • 3 cherry tomatoes quartered
  • ¼ cup frozen peas carrots and corn mixture defrosted

Instructions
 

  • Place the tortilla on a plate or cutting board.
  • Smear one side with hummus.
  • Top with mixed greens, then the remaining veggies.
  • Wrap up the tortilla like an open-ended burrito and cut in half.
