- 2 cups baby spinach
- 1 small English cucumber
- 10 grape tomatoes
- ¼ cup canned chickpeas
- ⅛ cup crumbled goat cheese (or feta cheese)
- ⅛ cup Homemade Lemon Vinaigrette (below)

Healthy Chickpea Salad Meal Prep and Storage
Meal Prep: To meal prep this salad, add all the salad (less than dressing) to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.

Low Calorie Chickpea Salad
Ingredients
- 2 cups baby spinach
- 1 small English cucumber
- 10 grape tomatoes
- ¼ cup canned chickpeas drained and rinsed
- ⅛ cup crumbled goat cheese or feta cheese
- ⅛ cup Homemade Lemon Vinaigrette or your favorite store-bought Vinaigrette
Protein Add-ins:
- 1 cup cooked and Shredded Chicken
- 1 4-ounce cooked Salmon Filet cut into large chunks
- 1 cup Baked Tofu
Instructions
- To a large bowl, or a lunch container add the spinach.
- Cut the cucumber into quarters lengthwise, then chop into small pieces. Add to the spinach.
- Halve or quarter (you choose) the tomatoes, and add to the spinach.
- Add the chickpeas and cheese to the salad.
- Either drizzle over the dressing, or add to a container to take with you in your lunch salad.
- Serve cold, this easy lunch salad is perfect for eating at work or at your desk.
