  • 2 cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1/3 cup coconut oil
  • 1/2 cup maple syrup
  • 2 eggs beaten
  • 3 mashed bananas
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F and grease a 9×5 inch loaf pan.
  • In a large bowl, combine flour, baking soda and salt.
  • In a separate bowl, mix together the coconut oil and maple syrup. Mix in the eggs, vanilla and mashed bananas.
  • Stir banana mixture into flour mixture until just combined. Pour batter into prepared loaf pan.
  • Bake for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let banana bread cool in pan for 10 minutes, then turn out onto a wire rack.
