Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ΒΌ teaspoon salt
- β cup coconut oil (or melted butter)
- Β½ cup zero calorie all-natural maple syrup (or regular maple syrup)
- 2 eggs beaten
- 3 mashed bananas
- 1 teaspoon vanilla extract

- Β½ cup chopped nuts (walnuts, pecans, almonds)
- Β½ cup chocolate chips
- 1 banana sliced lengthwise (place on top- see photo)
InstructionsΒ
- Preheat oven to 350 degrees F and grease a 9Γ5 inch loaf pan with coconut oil.
- In a large bowl, combine flour, baking soda and salt (and any nuts of chocolate chips).
- In a separate bowl, mix together the coconut oil and maple syrup. Mix in the eggs, vanilla and mashed bananas.
- Stir banana mixture into flour mixture until just combined. Pour batter into prepared loaf pan.
- Bake for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean.
- Let banana bread cool in pan for 10 minutes, then turn out onto a wire rack.
