- 2 eggs
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1/2-1 tablespoon red pepper flakes (optional)

Healthy Pesto Eggs Meal Prep and Storage
Meal Prep: These recipes are a little difficult to “meal prep”. You can get ahead by prepping pesto and just getting organized. But meal prepping eggs can be tricky.
Storage: If you have leftovers (again meal prep is not ideal with this recipe) you can store it in a meal prep container and store in the fridge for 3 days.
Reheating: You can reheat in an oven at 200-250 degrees until warmed through. Or a microwave for 1-2 minutes. A note though, eggs cook more when you reheat them.

Low Calorie Pesto Eggs
Ingredients
- Olive oil spray
- ¼ cup Homemade Low Calorie Pesto or store bought
- 2 eggs
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1/2-1 tablespoon red pepper flakes optional
- 2 pieces whole grain bread or gluten-free bread
Instructions
- Spray a medium pan (for 2 servings, or large for 4 servings) with olive oil and heat over medium heat until hot.
- Add the homemade pesto to the pan, and spread out in an even layer.
- Cook the pesto for 2-3 minutes until hot.
- Once hot, crack the eggs right into the pan, giving them each a bit of space to cook.
- Sprinkle with salt, pepper, and red pepper flakes (if using).
- Cook the eggs for 4 to 5 minutes (for runny eggs). Or 6-8 minutes for over medium, or 9-11 minutes for over hard eggs.
- Meanwhile, toast the bread to desired doneness.
- Using a spatula, scoop the eggs and pesto from the pan, and place atop the toast.
- Serve hot.
