- ½ bell pepper
- ½ jalapeno
- 1 garlic clove
- ½ cup diced ham (or crumbled vegan breakfast “sausage”)
- 2 eggs beaten
- 4 small tortillas or gluten free tortillas

- Hot Sauce or Salsa (optional)

Healthy Breakfast Quesadillas Meal Prep and Storage
Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or reheat in a pan on the stovetop over medium low heat, cover and flip every 2 minutes to avoid burning.

Low Calorie Breakfast Quesadillas
Ingredients
- Olive Oil Spray
- ½ bell pepper minced
- ½ jalapeno sliced. Note: remove seeds and ribs if you don’t like a lot of heat
- 1 garlic clove smashed but still intact
- ½ cup diced ham or crumbled vegan breakfast "sausage"
- 2 eggs beaten
- 4 small tortillas or gluten free tortillas
- ¼ cup low fat cheddar cheese
- Hot Sauce or Salsa (optional)
- Greek Yogurt (optional)
- Homemade Guacamole (optional)
Instructions
- Spray a large skillet with olive oil and heat to medium-high.
- Add the bell pepper, jalapeño and garlic clove, cook for 5-10 minutes until the bell peppers soften.
- Remove the garlic clove and discard. And lower the heat to medium.
- Add the ham, and push all the veggies and meat to one side of the pan.
- In the empty side of the pan add the egg and push around until scrambled, remove from heat and mix well.
- To get started with the tortillas, put a little cheese on one tortilla, then layer the egg mixture then a little more cheese, and top with another small tortilla.
- Heat a clean pan on med-high place the quesadillas in the pan and cook until cheese is melted and tortilla is slightly browned, flip and repeat.
- Using a pair of scissors, a pizza wheel, or a knife slice the quesadillas, then plate with the optional toppings and serve.
