Meal Prep: To meal prep this recipe, cook completely, then cool and add to individual meal prep containers. Holds well in the fridge or freezer.

Ingredients
- 2 chicken breasts boneless and skinless
- 1 onion minced
- 2 celery stalks minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 carrots shredded
- 2 garlic cloves minced
- 2 cups chicken broth
- ½ cup unsweetened almond milk
- ½ teaspoon oregano
- 2 tablespoons cornstarch
Dumplings:
- 1 cup flour or gluten-free flour
- ½ cup unsweetened almond milk
- 1 teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon parsley
Instructions
Slow Cooker Chicken and Dumplings:
- To a slow cooker, combine the chicken, onion, celery, salt, pepper, shredded carrots, and garlic cloves.
- Add in the chicken broth and mix together, then cook on high for 3 hours or on low for 6 hours.
- Remove the chicken from the slow cooker and shred with two forks, or chop the chicken into small bite-size pieces.
- Remove half a cup of the liquid to a bowl or glass measuring cup. Mix in the cornstarch, and whisk until there are no lumps. Add the cornstarch liquid, almond milk, and shredded chicken to the pot. Mix well.
- Combine the dumpling ingredients in a medium bowl, and mix with a wooden spoon until just combined.
- Use a spoon, to gather a ping pong ball size dollops of dumplings. Drop each individually into the slow cooker. Cook on high for 30 minutes, or until the dumplings float to the top.
- Serve hot, makes 4 servings.
Stovetop Chicken and Dumplings:
- To a large saucepan, combine the chicken, onion, celery, salt, pepper, shredded carrots, and garlic cloves.
- Cook for 10 minutes on medium heat until the vegetables start to soften and the chicken browns a bit (it won’t be cooked though yet).
- Add in the chicken broth and mix together, bring to a simmer and cook for 35 minutes sitting often.
- Remove the chicken from the pan and shred with two forks, or chop the chicken into small bite-size pieces.
- Remove half a cup of the liquid to a bowl or glass measuring cup. Mix to that liquid add in the cornstarch, and whisk until there are no lumps. Add the cornstarch liquid, almond milk, and shredded chicken to the pan. Mix well.
- Combine the dumpling ingredients in a medium bowl, and mix with a wooden spoon until just combined.
