Ingredients You’ll Need:
- Olive oil spray
- 1 tablespoons butter
- 1 tablespoons flour (or gluten-free flour)
- 2 ½ cups unsweetened almond milk
- 2 garlic cloves minced
- 4 cups chopped fresh spinach
- 1 (14-oz) can artichoke hearts
- ¾ cup shredded low fat sharp cheddar cheese
- ¼ cup shredded Parmesan cheese
- ½ cup 0% Greek yogurt

Healthy Artichoke Spinach Dip Meal Prep and Storage
Meal Prep: You can make this ahead of time and skip the baking, just cover and add to the fridge. Then bake as directed just before serving.
Storage: Will hold in the fridge for 4-5 days, tr 1 month in the freezer.
Reheating: You can reheat in the oven at 350 degrees for 10 minutes, or in the microwave for 2-3 minutes.

Low Calorie Artichoke Spinach Dip
Ingredients
- Olive oil spray
- 1 tablespoons butter
- 1 tablespoons flour or gluten-free flour
- 2 ½ cups unsweetened almond milk
- 2 garlic cloves minced
- 4 cups chopped fresh spinach
- 1 (14-oz) can artichoke hearts, drained and chopped
- ¾ cup shredded low fat sharp cheddar cheese
- ¼ cup shredded Parmesan cheese
- ½ cup Greek yogurt
Instructions
- Preheat the oven to 450°, spray a baking dish lightly with olive oil.
- Melt the butter in a large saucepan over medium heat, add in the flour and combine with a wooden spoon.
- Mix until the butter and flour come together in a paste.
- Add in the almond milk and whisk until combined, add the garlic and stir often until the sauce thickens and coats the back of your wooden spoon, about 15 minutes.
- Add the spinach and artichoke hearts to the cream sauce and stir, the spinach will wilt and darken.
- Once the spinach is wilted and reduced by half (about 5 minutes) remove from the heat and add in the 12 cup of the cheddar and 1/4 cup Parmesan cheese.
- Stir together and add in the Greek yogurt, mix to combine and move add to a baking dish, top with the remaining 1/4 cup cheddar cheese.
- Bake for 15 minutes, until hot and bubbly.
- Serve with Low Calorie Chips and vegetable sticks.
