  • ¼ cup Panko breadcrumbs or gluten-free pink breadcrumbs
  • 1 tablespoons shredded Parmesan cheese
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • Olive oil spray
  • Homemade Fry Sauce optional

Meal Prep: This recipe can be made ahead of time and then cooled. Then place in an airtight freezer bag or container for later.

Ingredients
  

  • 1 slightly under-ripe avocado
  • 1 egg
  • ¼ cup Panko breadcrumbs or gluten-free pink breadcrumbs
  • 1 tablespoons shredded Parmesan cheese
  • ¼ teaspoon salt
  • teaspoon pepper
  • Olive oil spray
  • Homemade Fry Sauce optional

Instructions
 

  • Preheat your air fryer to 350 ̊.
  • Cut the avocado in half. Remove the pit and cut each half into 5 slices. Use a spoon to scoop the sliced from the avocado skin. Set aside.
  • In a shallow bowl or pie pan crack the egg and whisk.
  • To a separate shallow bowl or pie pan, combine the breadcrumbs, cheese, salt and pepper. Mix together and set aside.
  • Dip each avocado slice into the eggs, then coat in the breadcrumb mixture before moving to a plate.
  • Once all the avocado slices are coated in breadcrumbs, add to the basket of the air fryer, sprat with olive oil, and air fry for 3 minutes.
  • Flip the avocado slices, spray with olive oil, and air fry for an additional 3 minutes.
  • When the avocados are crispy and golden brown, move to a plate and serve with Homemade Fry Sauce.
