Meal Prep: This recipe can be made ahead of time and then cooled. Then place in an airtight freezer bag or container for later.
Storage: Will hold in the fridge for 6 days and the freezer for a month.
Reheating: Add to an oven at 350 degrees until cooked through.

- Air fryer
Ingredients
- 1 slightly under-ripe avocado
- 1 egg
- ¼ cup Panko breadcrumbs or gluten-free pink breadcrumbs

- ⅛ teaspoon pepper

Instructions
Air Fryer Instructions:
- Preheat your air fryer to 350 ̊.
- Cut the avocado in half. Remove the pit and cut each half into 5 slices. Use a spoon to scoop the sliced from the avocado skin. Set aside.
- In a shallow bowl or pie pan crack the egg and whisk.
- To a separate shallow bowl or pie pan, combine the breadcrumbs, cheese, salt and pepper. Mix together and set aside.
- Dip each avocado slice into the eggs, then coat in the breadcrumb mixture before moving to a plate.
- Once all the avocado slices are coated in breadcrumbs, add to the basket of the air fryer, spray with olive oil, and air fry for 3 minutes.
- Flip the avocado slices, spray with olive oil, and air fry for an additional 3 minutes.
- When the avocados are crispy and golden brown, move to a plate and serve with Homemade Fry Sauce.

- Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper.
