This low calorie watermelon salad recipe with mint is packed full of flavors, without adding in any unnecessary calories.
Traditionally you would add oil into the dressing, but I skipped it and could not tell the difference. Though I did put a spin on the dressing I think you’ll love!
What’s the Difference Between Cucumbers and English Cucumbers:
- English cucumbers have a thinner skin and fewer (and smaller) seeds than an average cucumber.
- English cucumber are generally 25% larger than a traditional cucumber.
- If you want to use a regular cucumber in a recipe that calls for English cucumber, simply half the cucumbers and scoop out the seeds.

- Add the watermelon and cucumber to a large bowl.
- Mince the mint, and add 1/2 to the watermelon and cucumber, and 1/2 to a small bowl.
- To the small bowl of mint, add the lime juice, salt and pepper. Whisk to combine.
- Drizzle the dressing over the salad and toss together.
- Sprinkle over the feta cheese and serve.

- 1 lime juiced
