Ingredients You’ll Need:

  • 1 small watermelon cubed
  • 1 English cucumber quartered and sliced
  • 1 sprig fresh mint (about 5 leaves)
  • 1 lime juiced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ⅓ cup feta cheese crumbled

Healthy Watermelon Feta Salad Meal Prep and Storage

Meal Prep: To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.
Serving: If you added the dressing and the salad gets soggy, add it to a sandwich wrap or large tortilla. It’s a great way to salvage leftover soggy salad.

The sweet and soft watermelon with the crunchy cucumber is a perfect combination. And if you've ever added salt to your watermelon, you already know that salty bites like feta are amazing with the sweet melon!
Special Tip: If you choose to use a large watermelon and need more precise measurements, you'll need 3.5 cups watermelon.

Ingredients
 
 

  • 1 small watermelon cubed
  • 1 English cucumber quartered and sliced
  • 1 sprig fresh mint (about 5 leaves)
  • 1 lime juiced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • cup feta cheese crumbled

Instructions
 

  • Add the watermelon and cucumber to a large bowl.
  • Mince the mint, and add 1/2 to the watermelon and cucumber, and 1/2 to a small bowl.
  • To the small bowl of mint, add the lime juice, salt and pepper. Whisk to combine.
  • Drizzle the dressing over the salad and toss together.
  • Sprinkle over the feta cheese and serve.
