This Low Calorie Strawberry Galette recipe is just 136 calories and so delicious! I used my homemade pie crust recipe to make this healthy strawberry galette extra low in calories, but I did supply notes on which ones to buy at the store if you prefer to skip that step.
Ingredients You’ll Need:
- 2.5 cups sliced strawberries
- 1 teaspoon vanilla extract
- 1 teaspoon cornstarch
- 2 tablespoons Zero Calorie All-Natural Sugar (see recipe card for more options)
- 1 teaspoon lemon zest
- 1 Low Calorie Pie Crust (or store-bought)
- 1 egg

Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later.
Storage: Will hold for 6 days in the fridge.
Reheating: You can reheat in an oven at 200-250 degrees until warmed through.

Equipment

Ingredients
- 2.5 cups sliced strawberries
- 1 teaspoon vanilla extract
- 1 teaspoon cornstarch
- 2 tablespoons Zero Calorie All-Natural Sugar or regular sugar
- 1 teaspoon lemon zest
- 1 Low Calorie Pie Crust or store-bought
- 1 egg
Instructions
- Preheat the oven to 400 degrees
- To a large bowl combine the sliced strawberries, vanilla extract, cornstarch, sugar and lemon zest. Mix well to combine and then set aside while you make the Low Calorie Pie Crust.
- Assemble the low calorie pie crust and roll out onto a large piece of parchment paper.
- Move the parchment paper with the dough to a baking sheet.
- Use a slotted spoon to scoop the strawberries into the center of the dough, making sure to leave any excess liquid in the bowl.
- Spread the strawberries out a little so that the center of the dough is covered in strawberries. With 1 inch of dough left untouched around the edges.
- With wet hands (so the dough doesn't stick) fold the dough over the strawberries (see photo).
- In a small bowl, whisk the egg, then brush the egg over the crust.
- Bake for 25-30 minutes until golden brown.
- Use a pizza cutter or sharp knife to slice into 8 slices and serve.
