This Low Calorie Strawberry Galette is just 136 calories and is so fun and easy to make!I used my super easy Low Calorie Pie Crust to make this recipe, but you can also use store-bought crust (juts get the rolled up crust and not the crust in a pie pan at the store). Special Tip: To keep calories and sugar low I used my favorite zero calorie all-natural sugar, but you can use any sugar you like including coconut sugar and monk fruit sweetener.
To a large bowl combine the sliced strawberries, vanilla extract, cornstarch, sugar and lemon zest. Mix well to combine and then set aside while you make the Low Calorie Pie Crust.
Assemble the low calorie pie crust and roll out onto a large piece of parchment paper.
Move the parchment paper with the dough to a baking sheet.
Use a slotted spoon to scoop the strawberries into the center of the dough, making sure to leave any excess liquid in the bowl.
Spread the strawberries out a little so that the center of the dough is covered in strawberries. With 1 inch of dough left untouched around the edges.
With wet hands (so the dough doesn't stick) fold the dough over the strawberries (see photo).
In a small bowl, whisk the egg, then brush the egg over the crust.
Bake for 25-30 minutes until golden brown.
Use a pizza cutter or sharp knife to slice into 8 slices and serve.
