Ingredients
 
 

  • 1 medium cucumber cut in half, then sliced
  • 10 grape tomatoes halved
  • 1 head of Romaine chopped
  • 1 avocado sliced
  • 2 tablespoons feta cheese optional

Avocado Lemon Salad Dressing:

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon avocado oil or olive oil
  • ½ teaspoon honey or maple syrup
  • 1 garlic clove minced
  • ¼ cup chopped parsley
  • ¼ teaspoon salt
  • teaspoon pepper

Instructions
 

  • In a small bowl, whisk the salad dressing ingredients together.
  • In a large bowl toss together cucumbers, tomatoes, romaine, and avocado with salad dressing.
  • Serve immediately.
