Strawberry Shortcake Topping
- 2 cups strawberries quartered
- ¼ cup powdered sugar
- ⅕ cup almond milk whipped cream or whipped cream
Shortcake Ingredients
- 10 egg whites at room temperature
- 1 ¼ teaspoon cream of tartar
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 1 ¼ cups sugar
- 1 cup flour cake flour is best
Instructions
Strawberry Shortcake Topping:
- Add the strawberries and powdered sugar to a medium bowl. Mix well and set aside.
Shortcake Directions:
- Preheat oven to 325⁰.
- Beat egg white, cream of tartar, and salt with an electric mixer until they form soft peaks. Continue to beat while adding the vanilla, followed by the sugar.
- Add sugar a little at a time. Continue to beat until peaks are stiff and shiny. Remove bowl from mixer.
- Add the flour and gently fold into egg whites with a spatula.
- Pan and bake for 40 minutes, until a wood pick inserted near the center comes out clean.
- Cool and then slice into 10 shortcake slices.
Assemble the Strawberry Shortcake:
- To each slice of shortcake, add a mound of strawberries and a tablespoon of whipped cream… This is low calorie whipped cream, so add more should you desire.
