You will need about 1/2 cup of mashed banana to make this recipe. That is about 1 medium banana. But if you mash it and feel like it’s not enough, you can just add in 1-2 tablespoons of water to thin out the banana and it will be enough for the recipe.

This also works for extra thick pancake batter. Every protein powder is a little different, so depending on the brand you use, you may need to add water. I recommend adding it 1 tablespoon at a time.

These protein pancakes are great for meal prep! Store leftovers in the fridge (I recommend adding squares of parchment paper between them so they don’t stick together) for up to 3 days, or in the freezer for up to 3 weeks.

You can pop leftovers in the toaster to reheat, or add to a baking sheet and warm in the oven at 200 degrees for 30 minutes.

How to Make Healthy Protein Banana Pancakes:

  1. In a medium bowl, add the banana and mash well with the back of a fork.
  2. Add in the eggs and whisk together.
  3. Add the protein powder and baking powder, and mix well until smooth. Then let the batter rest for 10 minutes while it thickens.
  4. Meanwhile, preheat the oven to the lowest setting (200 degrees or “warm”) and place a baking sheet in the oven.
  5. Heat a skillet or griddle over medium heat, and spray with olive oil.
  6. Use a 1/4 cup to scoop scoop pancakes onto the hot skillet or griddle.
  7. Cook the pancakes until they bubble on top, about 45-60 seconds. Flip and cook them for just a few more seconds on the second side.
  8. Transfer the cooked pancakes to the warm cookie sheet in the oven while you work on the rest of the batter.
  9. Serve warm with your favorite toppings.
