Healthy Portobello Mushroom Pizzas Meal Prep and Storage
Meal Prep: You can make these ahead time, cool and drain off any extra liquid. Then add to meal prep containers.
Storage: Will hold in the fridge for 5 days.
Reheating: Add to a 350 degree oven in a baking dish, cook until hot 10-20 minutes. Or add to the microwave for 2-3 minutes.

Low Calorie Portobello Mushroom Pizzas
Ingredients
- 4 portobello mushrooms gills and stems removed
- Olive Oil Spray
- ½ cup Homemade Pizza Sauce or store-bought
- ½ cup shredded mozzarella cheese
10 Optional Portobello Pizza Toppings:
- Pepperoni
- Cooked and crumbled Italian Sausage
- Canadian bacon
- Chopped onions
- Diced bell peppers
- Sliced olives
- Diced pineapple
- Red pepper flakes
- Italian seasoning
- Parmesan cheese
Instructions
- Preheat oven to 450 degrees, and spray a baking sheet with olive oil.
- Place the mushrooms cut side down on the baking sheet and spray with olive oil.
- Flip over so the mushrooms are cut side up and add the pizza sauce to the wells, and top with mozzarella cheese and then desired toppings.
- Bake for 10 minutes until the mushrooms soften and the cheese melts.
- Serve hot.
