How to Make Portobello Burgers on the Grill:

  • Preheat the grill to medium heat.
  • Remove the stems from the portobello mushrooms, and clean the caps with a damp cloth or paper towel.
  • Slice the onion into 2 rings.
  • Spray the mushrooms and onions with olive oil. And sprinkle all over with seasoning salt.
  • Add the mushrooms to the hot grill, gill side up (cut side up). And add the onions alongside them.
  • Cook 7 minutes, flip and cook for an additional 5-7 minutes, until the mushrooms are tender and the onions are soft.
  • Meanwhile, add the avocado and lime juice to a medium bowl. Smash with the back of a fork until spreadable.
  • Add 1/2 of the smashed avocado to the bottom of each bun. Top each with the cooked portobellos, then the tomato, grilled onions, and spinach.
  • Add ketchup, mustard, or your favorite burger sauce, and serve hot.
  • Special Tip- I like to toast the buns, if you're using a BBQ to make these mushroom burgers you can just add them cut side down on the grill for the last minute or so… watch them so they don't burn!

How to Cook Portobello Burgers in the Oven:

  • Preheat the oven to 375 degrees and spray a baking sheet with olive oil.
  • Remove the stems from the portobello mushrooms, and clean the caps with a damp cloth or paper towel.
  • Slice the onion into 2 rings.
  • Add the mushrooms (cut side down) and onions to the prepared baking sheet and sprinkle with seasoning salt.
  • Bake for 20 minutes, until the mushrooms are tender and the onions are soft.
  • Meanwhile, add the avocado and lime juice to a medium bowl. Smash with the back of a fork until spreadable.
  • Add 1/2 of the smashed avocado to the bottom of each bun. Top each with the cooked portobellos, then the tomato, grilled onions, and spinach.
  • Add ketchup, mustard, or your favorite burger sauce, and serve hot.
  • Special Tip- I like to toast the buns, if you're baking these mushroom burgers you can just add them, cut side up on a clean baking sheet for the last 1-3 minutes.

  • Carefully add the mushrooms to the hot air fryer, cut side down. And add the onions alongside them.
  • Air fry for 7 minutes, the mushrooms will be tender and the onions soft.
  • Meanwhile, add the avocado and lime juice to a medium bowl. Smash with the back of a fork until spreadable.
  • Add 1/2 of the smashed avocado to the bottom of each bun. Top each with the cooked portobellos, then the tomato, grilled onions, and spinach.
