- 2 bunches Broccolini
- Olive Oil Spray
- 4 cloves garlic
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 lemon (zest and juice)

Healthy Roasted Broccolini Meal Prep and Storage
Meal Prep: Simply add individual portions to meal prep containers and store for later.
Storage: Will hold for 5 days in the fridge and for 2 weeks in the freezer.
Reheating: Add to an oven at 200-250 degrees until warmed through. Or to the microwave for 2-3 minutes.

Low Calorie Roasted Broccolini
Ingredients
- 2 bunches Broccolini about 1 pound total
- Olive Oil Spray
- 4 cloves garlic thinly sliced
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 lemon (zest and juice)
Instructions
- Wash the broccolini in cold water and trim about 1/2-inch off the bottom of the stems.
- Preheat the oven to 375 degrees.
- Add the Broccolini to a 9×13 casserole dish.
- Top with lemon zest, garlic, salt, and pepper.
- Place in the oven and cook for 15 minutes.
- Remove from the oven, toss and squeeze 1/2 the lemon over the broccolini.
- Add back to the oven and cook for an additional 10 minutes.
- Serve hot with lemon wedges.
