Healthy Mississippi Pot Roast Sandwiches Meal Prep and Storage
Meal Prep: The best way to meal prep these is to make the pot roast and cool. Then add to individual meal prep containers and store for later. All you will need to do to serve, is reheat the pot roast and scoop out the buns.
Storage: Will hold for 5 days in the fridge without the bun on the sandwich.
Reheating: Microwave for 2-3 minutes, or add to a sauce pan and cook on low heat until hot.

Low Calorie Mississippi Pot Roast Sandwiches
Ingredients
- 4 sandwich rolls
- 4 slices provolone swiss, or mozzarella cheese
- 1 cup Low Calorie Mississippi Pot Roast
- 8 pepperoncini peppers from the Mississippi Pot roast or a jar
Instructions
- Preheat your oven to 350 degrees.
- Cut the rolls in half and lay cut side up on a baking sheet.
- Using your fingers, hollow out 1/3 of the soft inner bread for each slice, set aside to make breadcrumbs or discard.
- Toast the rolls, cut side up for 5-10 minutes until you’ve reaches your desired doneness.
- Meanwhile, reheat the Mississippi Pot Roast in the microwave or in a small pot over medium heat.
- To assemble, add 1/4 cup of Mississippi Pot Roast to each of the bottom half of sandwich rolls. Top with pepperoncinis, cheese, and finally the top half of the sandwich roll.
- Serve hot with lots of napkins, this is a messy sandwich.
