Ingredients for Healthy Mint Chocolate Chips Cookies
Because I am all about the all-natural foods and no fake dyes, I recommend the all natural food coloring and the pure peppermint extract. If that is not important to you, feel free to use what you have on hand.
Special Tip: If you want to add creme de menthe baking chips, cut the chocolate chips by half and add 1/4 cup creme de menthe chips.

How to Make Healthy Mint Chocolate Chip Cookies
I love parchment paper, it ensures your cookies won’t stick to the baking sheets, and makes clean up so much easier!
But if you don’t have parchment paper, just grease the cookie sheets before you add the cookie dough balls to them.

How to Make Mint Chip Cookies:
- Preheat oven to 325 degrees and line a baking sheet with parchment paper.
- To a large bowl combine the flour, sugar, baking soda and salt. Mix well.
- In a separate bowl combine the apple sauce, vanilla extract, water, peppermint and food coloring. Whisk together.
- Pour the wet ingredients into the dry ingredients and mix together until just combined.
- Add 1/2 of the chocolate chips and fold into the batter.
- Scoop out 18 cookie balls and place on the prepared baking sheet.
- Wet your hands a little and then press the cookies down a bit to form cookie rounds.
- Top with remaining chocolate chips.
- Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
