These Low Calorie Mint Chocolate Chip Cookies Recipe are low calorie and all-natural! I was so excited to find all natural food coloring, that I had to make these yummy minty cookies right away. Of course you can use your favorite food coloring, or omit it all together. But I think they came out so pretty with the all-natural food coloring.
Ingredients You’ll Need
- 1 cup all-purpose flour (or Gluten Free Flour)
- ⅔ cup Zero Calorie All-Natural Brown Sugar (see recipe card)
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ¼ cup unsweetened apple sauce
- 1 teaspoon vanilla extract
- 3 tablespoons water
- 1 teaspoon pure peppermint extract
- 1 to 1 ½ teaspoons all-natural green food coloring (see recipe card)
- ½ cup semi sweet chocolate chips

Healthy Mint Chocolate Chip Cookies Meal Prep and Storage
Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat (or if stored unbaked follow directions below to bake) in an oven at 200-250 degrees until warmed through.

Equipment
- 1 cookie sheets
- 1 sheets of parchment paper
Ingredients
- 1 cup all-purpose flour or Gluten Free Flour
- ⅔ cup Zero Calorie All-Natural Brown Sugar
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ¼ cup unsweetened apple sauce
- 1 teaspoon vanilla extract
- 3 tablespoons water
- 1 teaspoon pure peppermint extract
- 1 to 1 ½ teaspoons all-natural green food coloring
- ½ cup semi sweet chocolate chips
Make these Cookies Vegan:
- ½ cup vegan chocolate chips in place of semi-sweet chocolate chips
Make these Cookies Gluten-Free:
- 1 cups Gluten-Free 1 to 1 Flour in place of flour
Instructions
- Preheat oven to 325 degrees and line a baking sheet with parchment paper.
- To a large bowl combine the flour, sugar, baking soda and salt. Mix well.
- In a separate bowl combine the apple sauce, vanilla extract, water, peppermint and food coloring. Whisk together.
- Pour the wet ingredients into the dry ingredients and mix together until just combined.
- Add 1/2 of the chocolate chips and fold into the batter.
- Scoop out 18 cookie balls and place on the prepared baking sheet.
- Wet your hands a little and then press the cookies down a bit to form cookie rounds.
- Top with remaining chocolate chips.
- Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
