How to Make Healthy Zucchini Pizza Bites
When I make these for dinner it’s a quick and easy meal that I just whip up quickly. But when I make them as appetizers I get a little fancy and add some fresh basil or parsley to the tops.

How to Make Skinny Zucchini Pizza Bites:
- Preheat oven to 450° and line a rimmed baking sheet with parchment paper.
- Cut the ends off the zucchini, then slice in half down the middle. Cut each zucchini into 8 rings.
- Arrange the zucchini on the prepared baking sheet so they are not overlapping.
- Top each with 1 teaspoon sauce, then 1/2 teaspoon cheese, and toppings.
- Bake for 5 minutes, then broil for 2-3 minutes (watch closely) until browned and crispy around the edges.
- Serve hot (serving side is 4 rings = to 1/2 zucchini).

Air Fryer Directions:
- Preheat the air fryer to 320°.
- Cut the ends off the zucchini, then slice in half down the middle. Cut each zucchini into 8 rings.
- Top each with 1 teaspoon sauce, then 1/2 teaspoon cheese, and toppings.
- Place the zucchini pizza bites in the preheated air fryer (working in batches as needed) so they are not touching.
- Lightly spray the tops with olive oil.
- Cook for 13-15 minutes until the cheese is melted, and the the zucchini tender.
