- 2 medium zucchinis
- ⅓ cup Low Calorie Alfredo Sauce
- ⅓ cup fat free shredded mozzarella cheese
- 4 mushrooms sliced
- 2 garlic cloves sliced
Low Calorie Pesto Zucchini Pizza Bites:
- 2 medium zucchinis
- ⅓ cup Low Calorie Pesto Sauce
- ⅓ cup fat free shredded mozzarella cheese
- 4 mini tomatoes quartered
Instructions
Oven Directions:
- Preheat oven to 450° and line a rimmed baking sheet with parchment paper.
- Cut the ends off the zucchini, then slice in half down the middle. Cut each zucchini into 8 rings.
- Arrange the zucchini on the prepared baking sheet so they are not overlapping.
- Top each with 1 teaspoon sauce, then 1/2 teaspoon cheese, and toppings.
- Bake for 5 minutes, then broil for 2-3 minutes (watch closely) until browned and crispy around the edges.
- Serve hot (serving side is 4 rings = to 1/2 zucchini).
Air Fryer Directions:
- Preheat the air fryer to 320°.
- Cut the ends off the zucchini, then slice in half down the middle. Cut each zucchini into 8 rings.
- Top each with 1 teaspoon sauce, then 1/2 teaspoon cheese, and toppings.
- Place the zucchini pizza bites in the preheated air fryer (working in batches as needed) so they are not touching.
- Lightly spray the tops with olive oil.
- Cook for 13-15 minutes until the cheese is melted, and the the zucchini tender.
