Ingredients You’ll Need:

  • 5 large jalapeños
  • 1 teaspoon garlic powder
  • 2 tablespoons panko bread crumbs
  • 5 tablespoons low fat cream cheese
  • ⅛ cup shredded sharp cheddar cheese
  • 1 slice bacon cooked and crumbled
  • 1 green onion

Healthy Jalapeño Poppers Meal Prep and Storage

Meal Prep: You can make these ahead of time (though they are best fresh) then reheat for game day or parties.
Storage: Leftovers can be frozen for up to a month. Will hold in the fridge for 5 days.
Reheating: Add to a baking sheet and pop in the oven at 350 degrees for 10-20 minutes until hot. You can also microwave for 2 minutes.

These jalapeño poppers are just 27 calories each, and so yummy!
The calorie count even includes the bacon (real bacon!) You can remove the bacon if you like and save an additional 5 calories per jalapeño popper.
Special Tip: These won't be spicy if you remove the seeds and ribs. Do this for a milk jalapeño popper. For medium leave in 1/2 of the ribs, and for hot leave in all the jalapeño ribs.

Equipment

Ingredients
 
 

  • 5 large jalapeños
  • 1 teaspoon garlic powder
  • 2 tablespoons panko bread crumbs
  • 5 tablespoons low fat cream cheese
  • cup shredded sharp cheddar cheese
  • 1 slice bacon cooked and crumbled
  • 1 green onion chopped

Instructions
 

  • Preheat the oven to 425 degrees.
  • In a small bowl combine the garlic powder and bread crumbs. Mix together and set aside.
  • Cut the jalapeños in half lengthwise and remove the seeds and ribs. Adding to a baking sheet as you work.
  • Spread 1/2 tablespoon of the cream cheese into each of the empty jalapeño boats.
  • Top with the breadcrumb mixture, then the cheese and finally the bacon.
  • Bake with the cut side up for 15 minutes until the cheese is melted and browned.
  • Move to a serving plate, top with green onions, and serve hot.
