- 5 tablespoons low fat cream cheese
- ⅛ cup shredded sharp cheddar cheese
- 1 slice bacon cooked and crumbled

Healthy Jalapeño Poppers Meal Prep and Storage
Meal Prep: You can make these ahead of time (though they are best fresh) then reheat for game day or parties.
Storage: Leftovers can be frozen for up to a month. Will hold in the fridge for 5 days.
Reheating: Add to a baking sheet and pop in the oven at 350 degrees for 10-20 minutes until hot. You can also microwave for 2 minutes.

Low Calorie Jalapeño Poppers
Equipment
- Measuring cups and spoons
- Paring Knife
Ingredients
- 5 large jalapeños
- 1 teaspoon garlic powder
- 2 tablespoons panko bread crumbs
- 5 tablespoons low fat cream cheese
- ⅛ cup shredded sharp cheddar cheese
- 1 slice bacon cooked and crumbled
- 1 green onion chopped
Instructions
- Preheat the oven to 425 degrees.
- In a small bowl combine the garlic powder and bread crumbs. Mix together and set aside.
- Cut the jalapeños in half lengthwise and remove the seeds and ribs. Adding to a baking sheet as you work.
- Spread 1/2 tablespoon of the cream cheese into each of the empty jalapeño boats.
- Top with the breadcrumb mixture, then the cheese and finally the bacon.
- Bake with the cut side up for 15 minutes until the cheese is melted and browned.
- Move to a serving plate, top with green onions, and serve hot.
