These Low Calorie High Protein Tortillas are just 55 calories each, and have 7.2g of protein. Perfect for tacos, enchiladas, or quesadillas, these protein tortillas are yummy and fun to make and fill. This recipe will make 16 small tortillas, or 8 large tortillas. Equipment
- Rolling Pin
Ingredients
- 1 cup all-purpose flour or gluten free one to one flour
- ½ cup Unflavored Collagen Powder or unflavored vegan collagen powder
- ¾ cup 0% Greek yogurt
- 1 tablespoon water
- ¼ teaspoon salt
Instructions
- Heat a dry pan over medium-high heat.
- Combine all of the ingredients in a large bowl.
- Mix until you have a ball of dough.
- Flour a clean surface, and place the dough on the prepared surface.
- Form the ball into 2 thick disks, then use a knife or pizza cutter to cut each ball of dough into 8 slices (you will have 16 total).
- Roll each slice into a ball and add one at a time to a clean floured surface.
- Use a rolling pin to roll each ball of dough out until you have a thin round tortilla.
- Add the tortilla to the hot pan and cook for 40-60 seconds each side (I do this as I roll out the next tortilla).
- When the tortilla is slightly browned, it’s done. Remove from the hot pan to a plate and move onto the next tortilla.
- Serve warm, or store in the fridge for up to a week, freezer for up to a month.
