- ½ tablespoon olive oil
- 2 tablespoons pine nuts
- 1 garlic clove
- 2 chicken breasts (boneless skinless)

Healthy Pesto Chicken Meal Prep and Storage
Meal Prep: This makes a great meal prep protein! Cook and cool, then add to individual meal prep containers (with whatever sides you like) and store in the fridge or freeze for later.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Low Calorie Pesto Chicken
Ingredients
- 1 cup fresh basil leaves
- ½ tablespoon olive oil
- 2 tablespoons pine nuts
- 1 garlic clove
- 2 chicken breasts boneless skinless
Instructions
- Add the basil, olive oil, pine nuts and garlic to a food processor and blend until smooth.
- Place the chicken into a bowl or freezer bag and add 1/2 of the pesto. Mix until the chicken is coated in pesto, set aside until you're ready to cook..
- Preheat the oven to 350° and line a baking sheet with foil.
- Add the chicken to the baking prepared sheet and bake for 45-50 minutes until cooked through.
- Remove the chicken from the oven, spoon over the remaining pesto, and serve hot.
