Ingredients You’ll Need:

  • ⅔ cup old fashioned oatmeal (or gluten-free oats)
  • ½ cup egg whites
  • ½ cup 0% Greek Yogurt
  • ¼ cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoons water 
  • 1 sweet apple (I used Honeycrisp)
  • Olive oil spray

Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container. 
Storage: Will hold in the fridge for 5 days and in the freezer for a month. 
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

Ingredients
 
 

  • cup old fashioned oatmeal or gluten-free oats
  • ½ cup egg whites
  • ½ cup 0% Greek Yogurt
  • ¼ cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoons water plus more as needed to thin batter
  • 1 sweet apple diced (I used Honeycrisp)
  • Olive oil spray

Instructions
 

  • Add the oatmeal, egg whites, yogurt, apple sauce, baking powder, cinnamon, and water to a blender.
  • Pulse to get things moving, then blend until mostly smooth.
  • Gently fold in the diced apples.
  • Meanwhile, heat a large skillet over medium-low heat.
  • Spray with olive oil and use a 1/4 cup to scoop and drop the apple pancake batter onto the hot skillet.
  • Cook until you see bubbles on the top center of the pancakes, then fill and cook for an additional 2-3 minutes until cooked through.
  • Move to a plate and serve hot with your favorite toppings.
